Appellation. AOC Bordeaux is a regional appellation that showcases all the skills and know-how of the Bordeaux wine region. Although famous for its red wines, this region has made white wines since a long time: it is also the birthplace of fine, world-famous sweet wines: these legendary wines served as inspiration for our Baron de Lestac sweet white Bordeaux.
Wine making At Baron de Lestac, we have selected a few winegrowers that have made the shift to organic methods Apolline Robert, our parcel expert, works closely with our partners to identify best organic parcels that will be used in the elaboration of our organic wines Our Bordeaux Blanc Organic undergoes a very short pellicular maceration to extract the aromatic potential and preserve wine aromas and quality Our wine then goes through a thermo regulated vinification at low temperature in oak barrels for a few months (alcoholic fermentation).
Sauvignon Blanc is a delicate grape that needs cool temperatures. The Bordeaux wine region has a warm, humid climate and soils that are particularly favourable (clay-limestone means the vine gets the appropriate amount of water, while gravel gives the wine a mineral character) and we select specific vineyard parcels from our grower-partners.
Our organic white wine is made from 100% Sauvignon Blanc, which lends the wine its characteristic acidity, minerality and aromatic freshness. The fruit comes from organic parcels cared for by winegrowers who have made the shift to organic methods.
The Baron de Lestac Bordeaux Blanc Organic is an excellent pairing with all your grilled fish and white meats (veal, poultry).
This wine also pairs exceptionally well with your aperitif moment, around a board of fresh goat cheese.
